IVA was opened by chef Vanya Pushkar (Vanja Puškar) — one of the first who dared to open a modern gastro in Belgrade, which would combine modernist techniques of high cuisine and a democratic atmosphere. Now the restaurant is rightfully considered to be one of the best places in the city, where the Balkan cuisine was recreated in a new way. Vegetarian pljeskavica (a real explosion of taste and color), an elegantly served meat paste or pork pashin (svinjska potrbušina) deserve a special notice.
